Prepare Your Pork Loin

First, you will want to preheat your oven to 400° F. You will end up lowering the heat later on but it is important to start at a high temp to trap the moisture inside the pork loin. Next, grab your favorite dry rub and rub it all over the pork loin and make sure it’s evenly distributed throughout the whole loin. Make sure to place your loin fat side up in your roasting pan. Doing this will help the pork loin from becoming dry and tough.

Cooking Your Pork Loin

First, wait until your oven is preheated. Once your oven is at 400° F place the loin inside and cook for 10 minutes. After 10 minutes take the loin out and lower the oven temperature to 350 ° F and cook the loin for another 20 minutes per pound of meat. Once the loin has reached an internal temperature of 145° F pull it out of the oven and wrap the loin loosely in tin foil and let it rest for about 10 minutes. This will help the juices stay inside the meat.
