Stove Top: +/- 15 minutes

Yield: 1 27cm X 27cm Pyrex dish

Ingredients:

Marie biscuits (enough to line your dish)
1 liter milk
1 Tbsp. butter
2 eggs
1 tin condensed milk (385g)
1 tsp vanilla essence
a pinch of salt
4 heaped Tbsp. self raising flour
ground cinnamon

Method:

Line your dish with the Marie biscuits. Marie biscuits can be tricky because they’re round in shape, but you can either let them overlap, or trim them down with a knife to get them to fit perfectly into your dish. Set them aside, while you prep the rest of the ingredients.

On a stovetop (on a medium heat), place the milk and butter into a pot, and bring them to a boil.

While the milk and butter are heating, place the eggs into a separate mixing bowl, and beat them with an electric mixer until they become fluffy (roughly 30 seconds to a minute).

Add the condensed milk, vanilla essence and salt, and beat them until the mixture is combined.

Sift in the self raising flour, and beat again until combined (about 30 seconds). There’s no exact science to the self raising flour measurement… it should be heaped spoons… like this!

Once the milk and butter begin to boil, remove the pot from the stove, and slowly add the beaten ingredients into it, while stirring (if you don’t stir, it will become lumpy)!

Once combined, return it to the stove (on a low to medium heat), and keep stirring until the mixture thickens (it usually takes a couple of minutes).

Slowly pour the mixture over the Marie biscuits. Take it slow, otherwise the Marie Biscuits will will shift, and the base won’t be uniform!

Lastly, sprinkle with cinnamon and pop it into the fridge to cool for about 3 hours. Once it’s cold, enjoy with your family!

  • Add the condensed milk, vanilla essence and salt, and beat until the mixture is combined.
