A Coburg is a round loaf with two cuts made in the top at right angles, so that it opens out in baking (a similar loaf without these cuts is called a cob). It is reputed to have been named shortly after the marriage of Victoria to Prince Albert of Saxe-Coburg in 1840, which would fit in well with the first known use of the word in 1843 (in a letter from Dante Gabriel Rossetti).
