Cabbage poriyal and cabbage kootu are commonly prepared dishes with cabbage but very few prepare chutney with cabbage. I had very less cabbage lying in my refrigerator which was not enough for preparing kootu or poriyal, so I made this easy cabbage chutney. It tasted yummy with dosa and idli. Do try it and you will not regret it. Today we will learn how to make cabbage chutney for idli, dosa following this easy recipe.
Cabbage Chutney for idli,dosa
Prep time – under 10 mins
Cook time -under 15 mins
Serves -2-3
Ingredients needed
Cabbage shredded or chopped -1 cup
Onions -1/2 cup chopped
Ginger -1/2 inch piece
Green chilli -2
Tomato -1/2 cup
Curry leaves -few
Tamarind – a small bit or 1/4 tsp
Grated coconut -1 tbsp
For the seasoning
Oil -2 tsp
Mustard seeds -1/2
Urad dal -2 tbsp
Red chilli -1
Hing/asafoetida -a pinch
Top up seasoning
Oil -1 tsp
Mustard seeds -1/2 tsp
Curry leaves -few
Preparation
Chop all the vegetables and keep it ready.
Method
Heat oil, add mustard seeds, when it splutters, add urad dal, red chillies and hing. Saute until dal turns golden brown and remove it from pan.
In the same pan/kadai, add chopped onions,ginger, green chilli, few curry leaves and saute until onions turn transparent.
Then add cabbage and cook until the raw smell of the cabbage goes.
Add tomatoes and cook for a few more minutes.
Allow it to cool. Now grind the urad dal and red chilli first to a fine paste. You can add a little of this cabbage mixture and grind.
Then add rest of the cooked cabbage mixture, tamarind paste, grated coconut and grind it well adding salt to taste.
Heat another tsp of oil, add mustard seeds, when it splutters, add curry leaves and pour it over the cabbage chutney.
Delicious Cabbage chutney is ready to be served with dosa or idli or upma.

Please clarify the term top seasoning..is it to something to double season the chutney or actually to thicken it?

Top up seasoning is nothing but seasoning again at the end. It is double seasoning the chutney for added taste. That's all.
